Lasagna (in Italian “lasagne”) is a traditional Italian dish made from dough layers, and in between them are placed different types of stuffing (usually tomato, meat, spinach, etc..), and is covered with béchamel sauce and parmesan.

The first dish which is called “lasagna”, is made in the region Emilia-Romagna, but then it gained great reputation and became popular not only in Italy, but worldwide. The first lasagnas were prepared in special ovens and pans without handles, in which were put a thin dough layers, and in between them ground meat and Parmesan cheese.

In Liguria chefs began to add pesto sauce (a traditional Italian sauce of olive oil, basil and cheese) in the ground meat made for the lasagna.

The dough for lasagna is prepared by the same process as the preparation of pasta. Selection of flour, which is ​​exclusively from hard wheat types, is being made. To make the dough green in color, spinach is added.

The modern lasagna is prepared, generally from 6 layers of dough, and on each layer of dough is placed meat mixture, mushrooms, vegetables, and on top – layer of cheese and a few pieces of butter, then it is ready to be baked.
